    Do You Put Milk In Your Omelettes?

    I usually put a splash in but I completely forgot to add it the last time, and it took me ages to realise why it was different. It was MUCH better tbh.

    Do you add milk ?

    No. I add a tablespoon of water per egg. Milk is supposed to break down the chemical bond of eggs, and make flat omelets. Water is supposed to make the them fluffy.

    Even Julia Child said to add water. It breaks the long chains (of proteins, I think) and makes the egg more tender.

    There is a good deal of debate about whether to salt the eggs before cooking or not. Child said not to.

    I wouldn't add milk, as it will significantly increase the chance your omelet will brown. If you like browned eggs (like a fritata), then no problem. I don't, so I wouldn't add milk.

    I'm a huge fan of Good Eats, or was, but Brown and I part company when it comes to eggs. His show that featured scrambled eggs was very French, and he stirred and stirred and stirred his eggs until they looked like polenta. It was pretty awful looking. I like scrambled eggs to have folds and body. To each his own though.

    So was/am I! Did you know he's started 'Good Eats Reloaded' where he takes old episodes and has updated them? The other day he repaired one from 1999!

    On the 'reloaded' shows he says new episodes are in development.

    On the egg question, with omelettes, I do the water thing. And I like HardUp's method of scrambled, but on the edge of burnt. They're 'Mom Eggs' (my Mom is not the best cook in the world).

    I agree with many chefs who have answered that they would have eggs for their last meal. I don't think you can not love an egg when it is cooked perfectly.

    As has been noted...never milk in omelettes, only in scrambled...although I don't even like it in those because I think it can make them rubbery.

    No I was trained in 1998 at a Culinary Institute in NYC one of teh chefs was Julia Child. Never add milk. When making Scrambled eds add a small piece of unslated butter as you whip them up add a table spoon of light Cream and a 1/8 TSP of Dijon Mustard. This is how scrambled are made at those over priced Hotels etc.

    I do think the French are masters at the intelligent use of mustard, which is to say subtle. The strong use of mustard, such as in German cuisine is also good, but a wholly different application of an element.

    I have never had a Dijon dish that I didn't like.

    I don't add milk or water to scrambled eggs or omelettes. I don't stir them to death either, I like a little more texture to them.

    Everyone has to cook as he wants, according to his desires. I live in two countries, and I have different recipes of omelletes that change from one country to another. (water, milk, or a mixture of both).
    Now, we try to pay attention to our weight, and we cook in a reasonable way, more lightly we'll say.
