I've always confused Acer saccharum and Acer saccharinum, although it is not really hard to distinguish them.

As for paper maple, I don't think that grew where I attended school and took botany.

The chocolate pudding pie thing COULD be related, as just about all chocolate pudding has lots of red food dye.

Try Acer griseum.
