Do you like slightly burnt food?

I love it for certain foods.

I go to a Chinese buffet sometimes and get a made to order stir-fry. I love it when they burn it. It tastes so much better burnt.

I like slightly burnt chocolate chip cookies, and when I order Brussels sprouts, I always get them well done.
Recently I heard a 'wise guy' story that I had a party at my home for twenty-five men. It's an interesting story, but I don't know twenty-five men I'd want to invite to a party. ~Joan Crawford

No, I don't think that I do like slightly burnt food although I like it well done. I do like bacon done so well that it could be considered burnt.

A little char can enhance a flavour profile.

That crisp over cooked edge on lasagna and mac&cheese casserole? Nothing could be better. Also kind of like popcorn that is a little burnt

I don't like burnt food, unless it's cooked on the barbecue. Then I like a bit of char!

Caramelization is an art. There is a fine line between acrid and savory.

Julia Child famously criticized the grilled vegetable fad when it first hit restaurants a couple of decades ago. She said there were two things about it she didn't like: "first they are raw, and then they are burnt."

As posters above have cited, Brussel sprouts are great caramelized, as is cabbage in a stir fry. Creme brulee is probably the most famous favorite, and I love it too.

The char on a ham is well worth it, too, as is the skin on roasted poultry.

Smores can be made with burnt marshmallows, which is mitigated by the sourness of the milk chocolate.

Corn, also full of sugar, seems to benefit from char, and Mexicans are especially fond of grilling it.

    Creme brulee is the best.

'Edge of Burnt' for my Scrambled Eggs. Why? It's the way Mom does them.

Also edge of burnt for some dishes with cheese--Frittata, Pizza, cheesy crusted bread, but not a fondue or grilled cheese sandwich.

Agree too with previous posters about the brussels sprouts.

I like french fries on the browner-done side rather than blonde, but not burnt. It's an art.

    No burnt stuffed cabbage, though.

Re: Do you like slightly burnt food?

Hot dogs I love when they're a bit burnt. Not totally black, but you know, about that 1/2 that sat on the grill for about a minute too long. A good sausage though, I feel differently about, maybe a little bit charred, but not burnt like my hot dogs.

Now any other sort of meat, especially beef, it better be mooing at me when I take it off the grill

Also I'm kind of famous for getting my grilled cheese a bit overdone, then taking a butter knife and scraping off the burned part.

The slight charring releases the umami, I believe, which makes it taste better.

Re: Do you like slightly burnt food?

Yes. I like the browning on my food, which takes time to achieve on pork and sausages particularly. Meat gains more flavor that way and it gets a bit crunchy as well. I also like when you add lemon on it and it creates some kind of sauce mixing which the fat and oil. At first I thought raw meat was a stupid idea but after trying it I have to say it's not that bad.

Baked pasta with bechamel and cheese, baked orata with parsley and lemon, parmigiana, grilled peperoni... all burned!

Yes. "Burnt" is not the same thing as "charred."

When I was a child I loved burnt marshmallows.

Perhaps that's why I think of the taste for burnt things as juvenile. But I know from firsthand experience that a significant number of people cling to the flavor.

    char

partially burn (an object) so as to blacken its surface.
"their bodies were badly charred in the fire"

synonyms: scorch, burn, singe, sear, blacken; informaltoast
"the steaks should be slightly charred"

Food which has been burnt has been consumed by heat.

Food which has been charred has been kissed by heat.

You intuitively knew this by specifying "slightly" burnt. The economical way of recognizing the strategic use of fire by a skilled cook is to say "charred." Do you like charred food?

    Burnt food is without nuance.

There are, though, some genuine weirdos who like "completely" burnt foods.

Re: Do you like slightly burnt food?

Luckily I read the whole thread before responding. Slightly burnt is not the same as dark brown.
You really do enjoy eating burnt food?!? And no, I do not like slightly burnt food at all. I do on the other hand like perfectly fried dark brown food, like grilled ribbs and sausages. But they cannot be burnt, there is a difference and it need skills to do it perfectly

    Bon appetit
