    Cooking Kale and Chard but smells like Ammonia

    Ok so I have been trying to eat more greens but this has put me off. I just threw out an entire pot of cooking greens (kale and spinach) because of ammonium smell. Even with hood fan on full the smell was truly vile. Both were fresh looking and bought from store in last two days, not left out of fridge... but obviously not fresh.

    I've had the exact same experience with this vegetable.



    I used a whole head of it cooked with beef mince but it ended up smelling like ancient farts.

    It's not typical for kale or spinach to smell like ammonia. I've cooked greens one way or another thousands of times. I've never noticed this, nor heard of it.

    Mustard greens may be deliciously pungent. And Pat is right, cabbage can be stinky.

    Perhaps you are interpreting their natural aroma as repellant? Of course if the greens were spoiled, that's not their nature. Perhaps try a different cooking technique, but I wouldn't write them off yet.

    Sorry, Cupid, but corn is not a vegetable. It is a grain. And is very high on the glycemic index (which means it raises blood sugar levels rapidly, which makes it a less than stellar choice for healthy eating).

    ^ LOL...certainly smelt as bad. I am considering going back to the store this evening with the uncooked portion and getting a refund. The cooked part I don't think I could take back unless I find a gaz mask. yuckapoo!

    Next time with kale... try cutting it into squares and then toss it very lightly in some olive oil and sea salt then roast at about 425... for ten to twelve.

    Like tater chips but damn good and good for you....

    But if you insist on the southern greens method, then cut it into strips and rinse it in the pot you will cook it in using cold water and a cup of vinegar.... do that once or twice and the smell will not be nearly as bad.

    You almost never want to boil a leafy vegetable in water, especially fresh ones.

    Also, a grocery store would never give you a refund on returned produce or an "opened package". Caveat emptor and what not.

    In America, rhubarb has officially been designated as a fruit. I didn't know that until this thread. But that's how I use it when cooking.

    True but in general, you want to blanch for at most 3 minutes vegetables and then shock it with cold water. When I was having fresh peas and asparagus, I usually blanch them with a pinch of salt and they usually turn out well unless I am distracted. Usually any longer than 3 minutes and you boil any flavor out of the vegetable.

    PS: if you do blanch leafy vegetables, you are supposed to remove the middle rib.
