    Lets talk about...food....

    Another thread here, mentioned addictions, including food. So I though I would start a thread/conversation about my favorite topic. Posts here can be as long or as short as you want them. Mention favorite foods, or foods you hate. Give short recipes, or ways you like to spice up a dish,...etc....

    I myself know I live beyond my means $$ wise, by going out to eat. But personally, I guess I like being able to go somewhere, order something i like, and having it made for me. I don't mean that to sound as snobby as it does,..it's just that I HATE to waste my time cooking. I LOVE to bake though. I would rather spend a hour making cookies or brownies that will last a whole week, rather than spend an hour making a dinner that I will finish in 15 minutes.

    I am the only person in the world I think, that HATES Mexican food. There are, like THREE Mexican restaurants in Lakewood alone,...and more downtown Cleveland! UGhh! I never really liked Chinese food growing up, but now LOVE it. Though, I draw the like at Sushi!!!! Raw fish???!! Never.

    Well, that's it for now. Now your turn......

    Funny, I'd take Mexican over Chinese. I made chicken enchiladas for dinner tonight. I have so many cookbooks in my pantry that I never use anymore. I go str8 to the internet for recipes now. The enchiladas were easy to make, I used all stuff in my fridge and they were good!!

    I can't really eat spicy food. Weak system, lol. I hate tortilla bread. I don't like veggies, like lettuce and stuff. I HATE beans. AAAAlll of this stuff, and more, is part of Mexican food. Eehhh..

    A Chinese restaurant that I use to go to a lot, recently burned down. There is another one nearby, which is almost as good. I love a dish called "Empress Chicken",...chicken dipped in eggwhites or something, and deep fried....MMMMmmm

    A am usually a big steak and chicken eater. (no jokes please,..lol..) Though I hate chicken on a bone. Boneless only, for me. For some reason it tastes different....

    I cook everything, I love my time in the kitchen, for the most part. I try to cook different ethnic recipes, I've done stir fry a lot, Italian, Polish etc. one of my favorite things is steak on the grill, that a big green salad and a nice cool beer is my idea of heaven!

    I just had Shake & Bake pork chops and salad for supper. It was pretty good...

    Also, I was at the mall earlier, and I had a slice of pizza. I haven't been there in a while, and you should have seen all the hot guys! Behind me in line was a tall, lanky, slightly geeky guy (I like geeky guys ), and normally I'm as subtle as I can be when I spot hot guys, but this guy was fuckin SEXY! I think he noticed me checking him out

    I can't get enough salad lately. Also I have a big thing for prime rib.


    Since I find it lonely cooking for one I usually end up going out these days so I only ever eat chicken strips and other easy things to make at home.



    PS One of the best things about Las Vegas is all of the restaurant choices. I can't wait to go back.

    I am not a salad eater. I hate anything green! I am not much for eating healthy....I put butter on french fries at some restaurants. Not McDonald's, but I mean steak places and such.

    Lakewood has a restaurant on practically every corner. You never run out of places to eat here. Some, like MELTS, which started here, are becoming nationally known.....

    I am not a picky eater, I would try any types of food.. one food that I would not try is Oyster, I have tried it and it taste slime to me... I prefer homemade food than fast food because it is cheaper and taste much better!

    I just got home and for dinner we had a fabulous falafel with a banana shake. I needed a fix...haven't been there in over a month now. I love the sweet hot sauce and the tahini and fresh flavorful crunchy cucumbers.

    I think I posted this here before but just in case you don't have a falafel appreciation....

    Sushi does not include raw fish, nor is it Chinese. It comes from Japan, and the raw food is known as "sashimi".

    I am quite the snob when it comes to food.
    Everything must be fresh, organic or at least all natural.
    Rarely consume anything pre-packaged, frozen or from a box.
    Only on occasion will I go out to eat.

    Prefer to cook my own food since I know what's going in it. Love everything spicy.
    I make my own home made salsa and guacamole. Fav: Making a home made spinach and mushroom omelette topped with fresh salsa and a huge spoonful of fresh guac on the side or sliced avocado will do....

    This thread has reminded me that the “Bite of Salem” is coming up. It’s an event that my town has every year with random food vendors from all over the world. I’m going to have to make a day of it and try a few new things.

    Why truffle so expensive?

    If you're quick on your feet, you've probably already put that into supermarket terms—an astronomical $100,000 per pound. While the hype value of the "world's largest" aspect of this auction inflated the price significantly, even at normal market price, truffles are among the most expensive food items on the planet. Why?

    Because just about every truffle that lands on your plate has to be not picked but found—underground, mind you—by a human being, usually with the help of a specially trained mushroom-sniffing dog. All species of truffle (in the Tuber genus) are ectomycorrhizal, meaning they require a symbiotic relationship with roots of specific trees to live. The truffles, sprouting underground attached to the roots, get easy access to the nourishing sugars created by the tree during photosynthesis. The tree gets the benefit of increased root surface area with which water and nutrients can be better absorbed.

    While it is possible to manually inoculate the roots of young trees with certain species of Tuber fungi, theoretically turning said tree into a truffle factory, the symbiotic relationship relies on numerous variables to thrive, including the presence of other fungi, soil and weather conditions, and specific types of trees. Add to that lag times of up to 20 years before truffles begin to sprout if you're lucky enough to get them to grow at all, and you've got one impossibly finicky plant to cultivate.     Truffles grow in our hood, JP. They don't have the reputation of the Euro-truffles. I've tried locals and haven't been super convinced, but then I'm not rich and in need of a narrative....

    I've eaten euro-truffles in small amounts. Black, in risotto, delicious.

    Truffle salt and truffle flour are both better than truffle oil, which suffers from fakery. You are right.

    I think I've only cooked with fresh, really good truffles once...

    In general though, truffles are like sexy heaven.

    It's the "earthy" taste that brought me to seek the mushroom- almost every reviewer said that.
    I know they grow in our hood I encountered Oregon's white truffle oil when browsing while ago..it was cheap, so I doubt the authenticity.
    Thks to mention truffle salt/flour- I didn't know that, 'course I'll get something frm u

    Speaking of sushi...I can generally deal with them as long as I don't eat only the raw stuff. The texture is a bit gnarly for me. Soy sauce and wasabi can only mask so much of that.

    I think everyone should learn how to bake and have a repertoire of basic pastry methods and recipes so they bake a cake or pie when someone comes and visits (hint hint!)

    Basic pastry is two parts of plain flour to one part of fat. Depending on how you bring together the two types of ingredients, you can make short crust or rough puff pastry. The fat can be wholly butter, half butter half shortening (or lard), or wholly shortening. You'll have to find out by taste which you prefer. To the same ratios of flour to butter as above, adding half part sugar to that and an egg yolk for each part of fat gets you a quick sweetcrust pastry. For a simple crumble topping, the for two parts flour, one part fat add one part sugar is fine.

    Flaky pastry and puff pastry is a lot of effort, and unless you're mad enough or curious enough to make it, shop bought puff pastry is a fine substitute.

    The basic cake recipe I use is the Victoria Sandwich sponge, for the weight of eggs you use, use equal weight of self raising flour, butter and sugar. I find margarine works better for lightness of sponge cake. Butter made cakes if you place them into the refrigerator goes somewhat hard. For two lined seven inch round tins, a three egg recipe divided into the two tins baked at 160 C in a fan oven is roughly 18-20 minutes. Once cooled, you can sandwich them together with whipped cream, or add a fruit layer and cream. You don't need to be fancy with cake frosting/icing.

    The basic sponge can also be used in 'upside down puddings' where a layer of fruit lines the bottom of the pan with sponge mix on top is added prior to baking. For example pineapple upside down pudding, or eves pudding using pre-cooked apples. Likewise, the aforementioned crumble topping can be used on top of fruit and less involved than making a sponge mix, and good with custard too.

    I'd go on, but, these few things can lead to a plethora of lovely tasty treats, both savoury and sweet.

    We are both good cooks. My partner is more of the sensible type, where he likes more vegetables, fish and organic plant based foods. I, on the other hand am a comfort food fanatic, however I will eat just about anything as long as it tastes good. I make great soups, casseroles, pizzas and do most of the baking. I am the house manager and work from home so often I cook by myself in the afternoon while he is at work but we cook together several times a week and that is the best fun ever. Here are some pizzas we made a couple of weeks ago.

    sushi is not Chinese.. it's Japanese :P and also don't condemn it before you try it.. you never know..

    I don't think I have a favorite food and I don't think I have anything I hate.. I like to eat and try any and everything :P

    I'm yet to try the many different cuisines out there so I can't exactly point out my favorite food atm..

    Even though I love everything Japanese, I don't really like sushi or their choices of sea food. eating raw stuff always reminded me of how people can get worms from it. I LOVE ramen though. And korean cuisine is soooo much better.

    And am a huge pizza fan. Some day i want to try eating different flavors of pizza everyday for every meal lol.

    Mmmm... food.....

    I try to learn as much as I can about different kinds of regional food and like to sample them. A few months ago I learned how to make a stromboli and now make them all the time. They're great. Tried my hand at making ratatouille and OMG it's incredible!

    Another thing I can cross off my list is kous kous. Tried to make polenta but it's way too labor intensive. However you're rewarded in the end as it's good. Made crock pot apple butter like an Amish.

    Next on my list of things to try is kimchi. Don't think I want to make it myself so I'll try a korean market and see if it's packaged. Want to try and make coq-a-vin but don't know how that would turn out.

    Shrimp is my favorite food. Shrimp scampi, fried, beer battered fried.... I love it.

    Also love scallops, calamari, clams strips and pan fried walleye.

    One of my favorite treats is Moretti brand polenta laced with coarsely ground buckwheat. Look for it. It goes with all kinds of robust fare, and it does take a bit of extra work, but really not too much. In fact, I think polenta can be easy to prepare. Over a low flame, the pot takes only occasional stirring. Just let it cook low and slow to the side, stir, do something else, stir, sip a glass of wine, stir, it's done.

    If you find a Korean market that's making its own kimchi you're going to be happy. I used to buy jars of kimchi from the generic super Asian mart. Then I found this little deli that was selling its own. The difference is phenomenal.

    I never liked Chinese food. My favorite food is Central Asian or Turkish grilled foods, especially shish kebabs and pilaf rice.

    I enjoy all types of food. The only thing I do not like is Liver and Onions.

    I do have to wonder about some "foods" though. Things like Wonder Bread, I wonder what it is, because it isn't anything like homemade bread. Another thing, is snack cakes. I am sorry, but a cake should not stay "fresh" for years. I am sorry, I am not mourning the loss of Hostess. But I hear rumors that a Hostess plant in Texas has been purchased, and will be beginning production some time around September.

    I love me some korean food. Tofu houses get much love from moi. Especially love the small dishes they serve on the side. The tofu soup, the bbq meat (Galbi!), and yes...the seafood pancakes.

    I actually hate seafood of all types....I knew sushi was not Chinese, but, hey...Chinese, Japanese,..same thing...(lol.. I know, I know...not really).

    My favorite hamburger. which I almost got at a restaurant tonite, but didn't,...is a hamburger topped with an egg, hashbrowns (sometimes known as homefries...shaved potato slices), and thick bacon or ham. MMMMmmm! I first found that at Hillbill...um, I mean DENNY'S. I was surprised to find it lately at many different restaurants. Breakfast and dinner in one!
