    Lol. I stayed at a friend's flat a while back, and one of the neighbours has 豬紅 tsyue hung/zhuhong/"pig red" which I think is what you mean by blood tofu, delivered every morning rather early. I don't know if it really contains pig's blood or not... The neighbour sells tofu, beansprouts, and vegetables down at the market.

    I helped my parent make 雞旺 "gai vong" in my parent's language which is chicken's blood. They slit the chicken's throat, collected the blood in some water, and then more importantly salt was added - this congealed the blood, and it was cut and boiled as cubes in soup. It has a certain tofu texture too.

    Tofu is made from dried soya beans. The beans are soaked, then blitzed and water is added and the mixture is boiled, then strained for the soya milk liquid.

    I heard that if the soya milk is left on low heat, a skin forms, and this is removed as a sheet to form "bean curd" sheets or to save space, pushed more compactly to make bean curd sticks.

    The addition of edible gypsum to soya milk makes it curdle. It is then cut and put into a muslin lined square mould, and a lid presses down on it to remove the excess water, this is bean curd.

    You can get various varieties of bean curd from the shops, including "smelly tofu" which is a 'delicacy' though I've never tried it. There is silken tofu, hard tofu, fried tofu etc. I like the fermented salty cubes of tofu as they are, or used to cook with.

    We occasionally make soya milk at home because we have a little machine to do it. You could use a blender to whizz the soaked beans in water and carefully boil the mixture and then strain the liquid through a fine sieve later.

    Yeah! I just watched Discover China: A Tale of Tofu. http://www.amazon.com/Discover-China.../dp/B000O76TMM Couldn't find any video clips, unfortunately, but the short documentary includes visits across China to various tofu specialists, including those mentioned above and more.

    The blood tofu does indeed include both bean curd and pig's blood and is elaborately prepared, as shown in the video. No doubt many of these varieties are only to be found in their original locales; hopefully they won't disappear altogether.

    That is indeed interesting. You should watch the plants as the cold weather takes effect and see if the foliage passes through an orange phase as the chlorophyll dies back.

    Hmm, attended a funeral this afternoon. I guess I didn't learn anything from it so much as I had a realization that if I move away like I desire to I'll have to work a lot harder than I may have realized to stay connected to my family. There are families that live in the same city that hardly communicate. I don't want that to happen.

    A friend of mine in The Bronx "got the call" Wednesday night, and headed to hospital as quickly as she could, and she GOT HER KIDNEY!! She's been on the waiting list, and having dialysis, for at least ten years. Twice before, she was somewhere preventing her from getting to the available kidney quickly enough. THIRD TIME IS A CHARM.

    Today's big learning experience is: don't walk along with your nose buried in your phone or whatever.

    I'm wandering around Hyde Park trying to find this new fancy-pants gallery they've just opened and catching up with HT on the phone as I go. I got so carried away reading about everyone's favourite day of the week etc. that I stepped into the Serpentine. Just one foot but it was a wake-up call.

    This made me think of the story of the Greek astronomer who was so engrossed in looking at the stars that he fell in a ditch. I couldn't think of his name, and as I was googling it I thought, 'Belamo would know'. When I found it (it was Thales of Miletus by the way) I reopened HT and guess who I saw . . .
