The thing with self-pics is that people obviously focus on the body, or the specific body part. So for the early ones, the main focus is something along the lines of "take photo of said body part, in focus". And that's totally fine, as this entire section of the forum attests to. But if you're looking for something different, you might need to move your thinking out a bit more.
The most obvious change is the one most people do - a different pose. Kneeling, sitting, standing. But feel free to try out some different ones. On one knee? One foot on a chair/stool and the other on the floor? Leaning off the edge of the bed with your cock/ass in the air?
There are plenty of other ideas, all of which can make for a more intriguing shot. In each of these, when I talk about what other self-pics do, please note I'm not criticizing them. I'm simply pointing out "if you want a different shot, you might want to try something different from the standard".
Camera Angle
Generally, guys go for the "straight on" shot. But there's no reason you have to. Lay the camera on the floor, and straddle it. Or place it on a small box, angled upwards, so you get a semi-upwards look. Or attached it to something on the ceiling (like a ceiling fan - turned off, obviously) and lie or stand beneath it.
Location
Most self-photos are taken in one of three places - bathrooms, bedrooms and against blank walls. But why not in another room? Bend over the kitchen counter. Lie face up on the dining room table. Pose naked in front of your computer with the JUB home page on the screen. Or, stick with the standard rooms, but change the situation a bit. Stepping into or out of the shower. Holding your cock directly under the bathtub water flow. In your bedroom, holding on to your closet clothes rod. Or emerging from UNDER the bed.
Lighting
This one's my favorite. Generally, the lighting is standard - a flash, or whatever the room light happens to be. So try something different. Get a desk lamp, put it out of the frame, but focus the beam right at your ass or cock - then turn out the other lights and take the picture. Or light some candles and use that as your lighting source.
Props
Nothing wrong with using sex toys if that's what you like, but feel free to use other things to enhance interest. Wear your oldest underwear, and pose with the seat or the frost torn out? Here's the main thing. It's digital photography. It's free. That means you can take a thousand photos trying to get one good one. And chances are, you'll have a lot that just don't look that good. And maybe an entire "set-up" ends up looking horrible. That's fine - now you know that one doesn't look flattering. Delete them all, and go try something else.
I post pics or vids of myself, but the only way it comes across as "post worthy" to me is the lighting and the angle.

Anyway, great points all around. I haven't posted any pics myself, but I'd consider myself a regular of this part of the forum. One thing people can really do is make their pics unique. Using your tips, Lefty, can really help them do that - set themselves apart from the "usual" cock/ass shots.
Some other things I'd suggest would be to take more full body shots. Sure, a lot of cocks look the same (with minor differences, I'll give you that), but if all we see is a cock, we've seen thousands of those (well, at least I have - in real life and in pics). If it's possible, grab a tripod and use the timer on your camera to take the picture so you can get further away and get a full body shot - because there are more beautiful things than just cocks.

Also, try catering to people's fetishes. Wear different types/colors of underwear or be in different states of dress (wearing only a shirt/socks, for example). Take pics of yourself doing housework naked - or of yourself jerking to other people's pics on this forum. Be creative!
