Neither Eva Longoria nor Jennifer Lopez are white; they're clearly mixed race like the vast majority of Latin Americans. In fact, Eva did a DNA test on a TV program and found out that she was mostly white with significant native ancestry and minor black African ancestry. Jennifer definitely isn't fully white either, but Ricky is. His ancestry is Spanish and French. If he has any non-European ancestors, it's probably as much as the average white American(not much, if any).
As for whether white Latin Americans call themselves "white" or not, they definitely do in their own countries. It's only in the US where it gets complicated. Most Americans think "Latino" is a race so they're treated differently and they end up identifying other Latinos regardless of race. My boyfriend is Puerto Rican and racially he'd be white (Spanish, French, Scottish), but he always chooses the "Latino" box. First, he's required to because both the "white" and "black" boxes have "non-Latino" next to it in parentheses and he's left to choose "Latinoe. Second, he doesn't identify with mainstream white Americans and it's probably the same case for Ricky who's talked about feeling like an outsider when working in the states.
Fun fact: Most Puerto Ricans tragically categorize themselves as white, but that's obviously not true. Only a minority are actually fully European, but even the ones that "look white" and the mostly white types like Jennifer Lopez check the white box off too (even if they know they have non-white ancestors). I guess it's the same in the states, though. Unfortunately terms like "white" and "black" are ambiguous and subjective. It's about perception nowadays.
My mother calls herself Latina too but she knows she is white. When people say they are Latino they mean their ethnicity and cultural background, not their race. I seriously doubt Christina Aguilera, Ricky Martin, and Cameron Diaz consider themselves anything but white.
Also where I live it includes Portuguese, Brazilian and Cape Verdean since we don't have as many people from Spanish speaking countries.
Also, Eva Longoria DNA tested and she has significant Native American ancestry, like most Mexicans; as for Jennifer Lopez, her father looks to be white, but her mother has significant African ancestry, so she is not a white woman either.

No one has any trouble seeing Dominicans as black people despite being Latino.. there is never debate over whether David Ortiz or Manny Ramirez or Gina Torres are black.. so why is there debate over white Hispanics being white? My mom is Latina, and she is white (despite having distant African ancestry) and no one ever questions either part of her ethnic identity, so this idea is very strange to me.
